Mindful Eating— Getting Toasted



We all know that what we put in our bodies is so important. Life is busy and, like any machine, we need fuel to run most effectively. With our packed schedules and itineraries, sometimes a light, travel friendly meal is the most practical option to fill and sustain ourselves while still getting some much needed nutrients. Listed below are a couple of toast options with minimal prep time and maximum flavor.


Avocado OTG

Ingredients:

Two slices of your bread of choice, lightly toasted

One whole avocado

One cup of arugula

One cup of grape tomatoes

Tablespoon of grated Parmesan reggiano

Salt

Pepper

Drizzle of EVOO


Preparation:

Toast bread. Slice and spread avocado. Top with arugula and quartered tomatoes. Finish with EVOO, salt, pepper, and grated Parmesan. Enjoy!!


PB and Jam Out

Ingredients:

Two slices of bread of your choice, lightly toasted

2 tablespoons of peanut butter

One whole banana, sliced

Salt

Pepper

Crushed red pepper

Drizzle of honey


Preparation:

Toast bread. Spread peanut butter. Top with sliced banana. Finish with honey, salt, pepper, and crushed red pepper. Enjoy!!
