Mindful Eating

Here at Sanctuary Yoga and Mindfulness we believe that the ways in which we nourish ourselves, body mind and spirit, are so important. That is exactly why some of our favorite things off the mat are food and community. Attached below is a delicious vegetarian recipe from a member of our local Philadelphia community. Chickpeas and kale in spicy pomodoro sauce


1 clove of garlic. Minced

3 Tbsp Extra Virgin Olive Oil

1 can diced fire roasted tomatoes

1 can chickpeas/garbanzo beans, drained

1 Calabrian chili, or 1 tsp of red pepper flakes

2 cups of kale, chopped (I like baby kale, you can get it pre-washed at most grocery stores no chopping necessary.)

Fresh Basil


Simmer EVOO (slowly cook the extra virgin olive oil)

and garlic on medium heat until it is fragrant but not brown. Add the can of tomatoes, you can also use fresh cherry tomatoes but they aren’t really worth your time out of season. Canned is easy, and just as good. Add your chillies, the amount is arbitrary depending on your heat threshold. Let that simmer on moderately low heat for 5-6 minutes stirring occasionally. Add the can of drained chickpeas. Simmer another 2-3 minutes. Add the kale, cook down for another 4-5 minutes. Plate, add fresh basil, and parmesan to taste (optional vegan parm.or no parm). I like to crack some fresh black pepper on there as well. Grill a piece of bread to sop it all up with.

Leftover tip:

Preheat oven to 425. Heat your leftovers in an oven safe skillet on the stovetop over medium heat until heated through 2-3 minutes, crack an egg in the center. Transfer skillet to oven, bake until whites are just set but yolks are still runny, 5-8 minutes.
